Mexican Burrito Salad!

I almost caved in! With takeout on my mind, I kept finding myself looking at burritos! No No No. Not today Katrina.

With baby kale as the base, I made a salad that definitely curbed

my appetite.

I mixed cooked couscous, black beans, green onion, and yellow pepper. Dressed it with lime juice, olive oil, red wine vinegar, and cumin. And topped it off with fresh cilantro, and salsa!
